Ornellaia Bolgheri DOC Superiore, vinul reprezentativ al producătorului, are în compoziție Cabernet Sauvignon, Merlot, Cabernet Franc și Petit Verdot. Realizat prima oară în 1985, provine din cele 97ha care se bucură de climatul perfect al colinelor Bolgheri, cu expunere spre mare. 
Vițele de vie sunt îngrijite manual pe toată durata anului. Când sunt copți (la maturitate deplină), strugurii de pe fiecare parcelă sunt culeși manual, în cutii de maxim 15 kg. Ciorchinii trec apoi pe o masă dublă de triere unde orice boabă imperfectă este eliminată manual, asigurându-se astfel că doar strugurii perfect copți ajung să fie vinificați și maturați. Vinul Ornellaia rezultat este lansat pe piață după 3 ani.
